All of our wines are unfiltered and unfined, ensuring the purest expression of the grape.  Because pinot noir is such a delicate grape, we do not use pumps; we use 100% gravity during harvest, crush, press, and bottling, to preserve the subtle nuances of the wine. And half of the fermentation bins are done with indigenous yeast.

  • 2008 Estate Pinot Noir, 100% Whole Cluster Available only to Wine Group members and/or at the tasting room
    • Brilliant garnet color; an initially reticent but then quite intense nose of flowers, red fruit, mesquite and juniper berries
    • On the palate, a hint of fruit sweetness buffers the savory, herbal, and borderline tar-y signature of berries fermented in the presence of their stems; noticeable grip, great length and decidedly elegant
    • Additional bottle age might be salutary. Once upon a time, all red grapes were fermented without destemming, but the 100% whole cluster protocol is now unusual, even in Burgundy
    • Worthy successor to the 2007
    • Drink with strongly flavored meats such as lamb, veal, duck and venison
    • Aged 21 months, 45% new French oak, 173 cases
    • $55/bottle, Wine Group member $44

  • 2008 Estate Pinot Noir, 100% Wild Yeast Available only to Wine Group members and/or at the tasting room
    • Light-to-medium garnet color; a dusty, slightly talc-y nose redolent of pot pourri and dried cherries
    • Very slightly fruit-sweet attack, then peppery with notes of conifer, camphor and lavender at mid-palate; long, silky and soft-edged thereafter, but with persistent peppery grip toward the finish
    • Because resident yeast fermentations usually involve multiple genera and species of yeast, each ofwhich leaves a distinctive aromatic signature, wines that rely on resident yeast populations often display, as here, unusual aromatic interest
    • Drink with earthy meats, grilled salmon, voluptuous pastas and risottos
    • Aged 17 months, 65% new French oak, 133 cases

SPECIAL RELEASE
2006 Estate Pinot Noir, Special Burgundian Clone
Tended exclusively by Jim, this is the third vintage from this special half-acre block. This clone, a rarely propagated French pinot noir clone is not available in the U.S.  Its taste is similar to its Burgundian counterpart: rich, concentrated, layered and unique in its flavor profile.  Expansive nose, intense aromas of plums, black cherries, carries through to the palate with complex, yet subtle layers of unfolding flavors, including dark cherry, plum, orange peel and raspberry.  Lingering finish, long supple tannins and flavors of dried cherry and black tea.  Extremely age worthy, and should continue to evolve for at least 8-10 years.

40 Cases ~ Aged 28 months ~ 100% new French oak
